Like a margarita, only with mezcal. Also, with less of everything besides the mezcal, so the smoky flavor is highlighted, rather than overwhelmed, by the other ingredients.
2 oz. Mezcal
4 dashes Key Lime Bitters
.5 oz Quick and Easy Blood Orange Cordial
Shake with ice and strain into a cocktail glass.
Recipe for Quick and Easy Blood Orange Cordial: Assuming you had just zested four blood oranges for bitters, you might be left with four naked blood oranges which need a new purpose in life. Juice the blood oranges and strain out any pulp. Simmer with half the amount of sugar (i.e., if you have 2/3 cup of juice, simmer with 1/3 cup of sugar) until the sugar dissolves. Allow to cool. Add the same amount of high proof vodka or grain alcohol as you added sugar. Use and enjoy.
My favorite recipe for Key Lime Bitters is in Brad T. Parson’s Bitters: A Spirited History of a Classic Cure-All.
